The Robusta tree is more resistant to climate changes, but its production is lower in quality and quantity. It contains between 2 and 4% caffeine by weight, and its taste is bitter and lingers on the palate.

 

Robusta coffee is primarily used for the production of instant coffee and is consumed mainly by large companies like Nestlé and Folgers.

ARABICA COFFEE

This is the fruit of Coffea arabica, with large, elliptical-shaped beans that have a greenish-blue color and a green aroma. It contains between 0.3 and 1.2% caffeine by weight. When roasted, it develops well in terms of volume, and in the cup, it is an aromatic coffee with excellent flavor and a mouthwatering acidity that increases with the altitude of the plantation. African and Central American countries, in general, use this coffee to obtain high-quality blends. These varieties are primarily produced in Africa, while production in the Americas is relatively low-scale.

 

Of the Peruvian production, 96% is Arabica variety, and only 7% is Robusta, due to its higher price in both domestic and international markets. It produces a smooth beverage with a pleasant aroma, medium acidity, and body. There are other varieties with specific characteristics, such as Typica, Bourbon, and Mundo Novo.

 

Typica: Also known as Criollo Arabica coffee, was the first variety to arrive on the continent in the late 18th century. It is considered the original standard variety from Ethiopia. It has a slightly taller stature and bears red and yellow fruits. It is of high quality, and within this variety, there is a type called Maragogipe coffee, originating from Brazil. Maragogipe is known for producing larger-sized beans, although it is not cultivated in Mexico.

 

Bourbon: Originating from the island of Bourbon in Africa, it arrived in Mexico from Guatemala through the Soconusco region. There is also Yellow Bourbon, originating from Brazil, and this variety is primarily grown in Chiapas.
